Wow, I'm surprised it worked the first time...
When you say to disable PIN, is it:
- from the iphone with my non-working SIM ? (from settings -> telephone -> PIN blah blah -> I can enter my PIN but the phone seems stucked when saving)
- from the iphone with my "legal" Orange card (meaning I must enter this PIN, which is different from my 3rd party SIM's PIN). How?
- another phone with my 3rd party SIM. In that case I suppose I have to find a menu somewhere to what? record the code in the SIM?
Sorry, I'm not used to playing with SIMs...

Ok I made this SIM not asking any PIN in my "old" phone.
What's next, I still can't get it accepted by the iphone... ;(

You should disable the PIN of your non-working SIM in another phone. It should be a menu option to disable it (Security options or similar). Try a Nokia phone, it can disable the PIN (normally under Security options -> PIN Code -> Disable).
On the iPhone you have the option in Settings -> Phone -> SIM PIN.

Try to reset Network Settings and try to switch Airplane mode On and Off

OK, ywrapper did it, no airplane/network reset trick.
I ran it, it finally restart the phone quite quickly and now it's working again.
Hope my boring story can help: I never read yellowsn0w couldn't manage PIN-enabled SIMs. Probably read too fast.
