I mean like the numbers, photos, music, from the backup of an 7.6.2.9 itunes after I updated to 2.0.1 using winpwn 2.0.0.4 and itunes 7.7.1

Hi seseberg,
we got mixed results from the users here on that. In some cases the iPhone's behavior is weired at best.
So you have synced music, videos, addresses, calendar etc with iTunes, right (like having outlook on Windows; Addressbook and iCal on a Mac). Then you upgrade iTunes to 7.7.1. Then you would use Winpwn 2.0.0.4 to upgrade the iPhone to 2.0.1 and unlock it.
Once you connect to iTunes then, it will offer to "restore data from a backup" or "setup as a new iPhone". To avoid problems I always choose "setup as a new iPhone". After that I sync the iPhone via iTunes and get back all my music etc.
The problem (sometimes) with restore from a backup is, that it will put back old preference files that might cause problems. Should work on 1.1.4->2.0.1 but I would not do it.
Setting up as a new iPhone you will just loose your sms history, call history, stock and weather settings, known wi-fi accesspoints etc. That would not be too bad setting some up again.
If you want to keep the sms and call history you could SFTP into the 1.1.4 iPhone, goto
/private/var/mobile/Library/ and copy the the data you need to your Desktop (Mac or PC). Then after upgrading you can put those data back - no problem.

Copying database files from my 1.1.4 to my PC, then placing them back to the freshly pwned 2.0.1 is exactly how I kept my sms, notes, camera roll pictures, and even the call history... Needless to say I set it up as a "new phone". Nothing ever crashed. It's not as snappy as 1.1.4, but I guess it's a trade-off between AppStore goodies and an extra second lag...
