Hey there.
I'm also a Mac user.
You have to download PwnageTool, the latest version, from DevTeam.. then you will have to create a custom .IPSW that has the baseband update disabled (PwnageTool doesn't really let you enable the baseband update anyway).. and then restore your phone using the custom IPSW that was created by PwnageTool.
I haven't done the upgrade due to time constraints, but it's the same procedure whenever you wish to jailbreak or update your jailbroken phone's fw.
No phone that I know makes your SIM card useless, so I don't really understand the thing you say about taking out the card and using it only in the iPhone.
I've never had such a problem using UniversalSim v5.5.0, and the only few times I've had a No Network problem, it's been because I'm on a really bad reception area, therefore, it's due to the physical location of the phone.
Let me know if I can help with anything else.

Can someone tell how can you revert update 2.2 (including firmware and baseband 2.2) to complete 2.1 (including firmware and baseband)?
I did the update through iTunes and now I don't have service.

For what i know it is not possible... yet! Hope and wait... may be the guys from UniversalSim will find a solution.

Main app firmware is reversible (it doesn't try to disallow itself from being downgraded).
Baseband firmware is not normally reversible (it explicitly disallows a downgrade). Past downgrades have been possible due to bugs, but so far 2.2's baseband reveals none.
