Just put .txt on the end of the plist file name and then you can open it in notepad or and other word processor. then remove the .txt when your all done and have it saved, dont forget to back every thing up!

You can also convert the plist file through this website:
http://140.124.181.188/~khchung/cgi-bin/plutil.cgi
Just submit the plist file and it will return you a converted file in text format.

downloaded n installed jEdit...but it still doesn't display .plist file in xml format....any help?

do you mean the .plist file or the actual app file?
The .plist (has a Quicktime icon) you can just drag and drop it into any text editor.

apparently plist files are in binay and need to be converted to xml for editing - if copy a plist file straight out of your iphone then drag and drop into a txt editor in windows XP, it doesn't appear in xml format, so i cannot be edited and resaaved for actual use in the iphone (as i understand it)
i also am seeking a plist editor for windows xp - if anyone has any add'l useful info on this subject, much apprecited!!

all binary Plists you can convert with the above link. then edit them with a text editor!

Convert the plist file with that first, then open it up using Notepad. You don't need to convert it back. Put pop it onto your phone.

download and install erica saduns plutil like this way
you can always convert it to xml by using
Code:
plutil -c xml1 carrier.plist
or again back to binary with
Code:
plutil -c binary1 carrier.plist
