It's probably too late by now for the OP, but I found this great guide to recovering deleted files from the iPhone. I had upgraded my phone to 2.0 and had forgotten to back up my photos first. This method got them all back!

good luck....
Hi volkspost I found this through a Google search.
So mdhelper created a folder on my desktop called "Recovered iPhone Files". It has a bunch of .db files in it that I can't seem to open. Is there a way to get these back into my phone? I really need my notes and SMS especially.
THANK YOU SO MUCH!!
As soon as your upgraded iPhone is "free" install OpenSSH via Cydia, then use WinSCP (Windows) or Cyberduck (Mac) to SFTP into the iPhone. Goto
/private/var/mobile/Library/SMS
Replace the file sms.db inside SMS with the one from the backup, restart the iPhone and you got em back. Same applies for call_history.db in CallHistory, ..
You probably wont see an directory called Notes in Library. The directory is created once you create the first note. So on your iPhone create one note. Then you'll find Notes and in there notes.db. Replace the one aswell.
hope this helps
Unfortunately my backup was too corrupt to save my SMS and call history; they just showed up blank. I'm much happier that my notes were saved. Thanks a million. I'm going to rely on manual backups from now on.
Thanks so far, I was able to recover some data.
Now I've got a couple of .db files.
But I don't know which one to use for replacing on the iphone.
I've got 5 keychain db's, 5 call_history db's, 5 notes, 5 sms
and three that read: 551926928.db
Which one is the most recent?
uuups. Do you have more than one iPhone? Usually iTunes sets up one backup folder per iPhone. You either got the data from 5 iPhones or iTunes set it up as new. What you can do is check (on a Mac)
~/Library/Application Support/MobileSync/Backup
Inside iTunes stores a backup for each iPhone in a folder, the name made of tons of characters and digits. Check the "last edited" to find out the correct folder if you only own one iPhone. On the desktop create a new folder and move the other four there.
Run mdhelper again and you should be set.
