Bad luck, I am sorry for you.
If buying a new one, it does not matter wich version, just buy one.
First then make sure it is on 1.1.4 firmware. Even though 1.1.4 is out for a while, there maybe still some older hanging around in stock.
Put the iPhone in restore mode then (search the forum how to), connect to iTunes and restore to firmware 1.1.4.
Use iLiberty or Pwnage to jailbreak, activate, unlock (both for Mac and Win)
iTunes then will probably ask you, if you want to restore "from a backup". Dont use the option it may lead to problems cause some old prefs would be copied back.
Choose "setup as a new iPhone" and sync with iTunes to get all musik, videos, adresses, cal items etc on the iPhone then.
Most important: Watch your iPhone then, dont loose it again ;-)

I'm not sure if you can buy an iphone now. I've heard a lot of stores don't have them and they are not restocking them because the 3G version is on its way out soon.
Good luck and I'm really sorry about your lost.
