Just tryed with iTunes 7.7 on Windows Vista... everything looks fine with unlocked 1.1.4 (and still no prompt to update to 2.0)

Zibri warns against upgrading to iTunes 7.7. Something about major changes in DFU mode. Has anyone been able to restore firmware 1.1.4 under iTunes 7.7?

Even if you cant restore to 1.1.4 you could downgrade iTunes to 7.6.2. As there are websites that have downloads available for previous versions of iTunes and many other programs. One website has all the way to iTunes 4 I think.

Well, Zibri is right about one thing: it isn't easy to downgrade iTunes to 7.6.2: the installer installs files all over the place. If you have good instructions ...
And with 7.7, there definitely are more checks in place, as I found this in my system log:
