Just click on litle "x" button on the right from "backing up" and that's it! It will stop backing up but it will continue with sync.

Firstly - Apple has posted some good articles on how to reduce the time the backup takes. You want the backup. It comes in handy when things go wrong.

iPhone: Improve backup and restore times by reducing iPhone Camera Roll
iPhone and iPod touch: About backups

If after reading all of this you really want to disable backups. I don't recommend the suggestion from grimmet below (especially not the windows one)

Try ITunes Modes - The iPhone Wiki

Look under the "Device Backups Disabled" section. It has
    Code:
    "%ProgramFiles%\iTunes\iTunes.exe" /setPrefInt DeviceBackupsDisabled 1
    on x64 windows it is
    Code:
    "%ProgramFiles(x86)%\iTunes\iTunes.exe" /setPrefInt DeviceBackupsDisabled 1
To enable backups again change the 1 to 0

See the commands above. You can run them simply by copy-pasting them into Start-Menu -> Run. It will look like nothing happened after you ran this but trust me, when you open iTunes and connect your iPhone there will be no backup.
