    First step..

restore to iOS 3.0 and use redsn0w to jailbreak. http://www.hackint0sh.org/f127/22056.htm
iClarified - iPhone - How to Jailbreak Your iPhone 3G on OS 3.0.x Using RedSn0w (Mac) (you cna use redsn0w 0.9.2 downloaded from here: http://wikee.iphwn.org/howto:rs9 )

Second step use pwnagetool to generate a custom IPSW for 4.0 or 3.1.3 (I recommend you use 3.1.3) and restore that custom IPSW via iTunes. Be sure to confirm that the setting to NOT update the baseband is set when making the pwnagetool custom IPSW

    Install ultrasn0w unlock from Cydia.
    iClarified - iPhone - How to Unlock the iPhone 4, 3GS, 3G Using UltraSn0w
Instructions for all these procedures can be found in many threads here on hackint0sh. iClarified also has step by step guides for these tasks.

    Don't use sn0wbreeze - find/borrow a mac.
Don't restore directly to 4.1 - you will lose unlock (probably for a very long time)
4.0 is very slow on 3G iPhone, 4.1 is better but no safe and official way to go to 4.1 for a 3G that doesn't destroy your chances of jailbreak.

Again, sn0wbreeze is not a 100% safe or officially recommended solution - please avoid it.

There will be an update to pwnagetool that allows safely going to 4.1 on your 3G - it will arrive soon (maybe next week). Until then, only go as far as 3.1.3 (but try as hard as you can to keep your baseband from being updated past the necessary update to iOS 3.0 baseband 4.26.08 (this is why I recommend you restore to 3.0 using original apple IPSW)
Please read the stickies & search forum before posting!
