If you're getting error 3194, that means that either TinyUmbrella is not in TSS Server mode and thus, not returning the SHSH to iTunes, or it means that you don't have the SHSH on file for that version. Since you said you had all your SHSH, I'm assuming it's probably just an issue with TinyUmbrella. Make sure you're not running any webservers or any other services that would be binding to port 80 on your computer, then retry. If that still won't work, use the latest redsn0w or sn0wbreeze to stitch an IPSW that includes the SHSH for your target device, then you don't have to use TU in order to update it.

As far as step by step goes, this is as close as I can get:

    1) Download your SHSH with TinyUmbrella
    2) Download the firmware you want to restore to
    3) Ensure your SHSH are visible in Tiny Umbrella, and start the TSS Server
    4) Restore your device in iTunes
    5) Use redsn0w to jailbreak

If you can't get past step 4, then do this instead:

    1) Download your SHSH with TinyUmbrella
    2) Download the firmware you want to restore to
    3) Use redsn0w and your downloaded SHSH files to personalize / stitch an .IPSW with your SHSH
    4) Restore your device in iTunes by pointing to that SHSH-stitched .IPSW. You may need to be in Pwned DFU mode for this if you're jailbreaking at the same time, defer to the documentation to determine.
