So I had to go back to the original 2.2 firmware, then use the Pwnage Tool (2.2.5) with the 2.2.1 firmware. Then when I updated with the custom 2.2.1 firmware and the the (option or alt) Update to 3.0, everything went fine.
So, if you want to upgrade before the new jailbreak tools are released and you have had used QuickPwn, you should re-jailbreak your iPhone with the Pwnage Tool if you want to keep using your non-approved carrier sim card and not get locked out of the iPhone 3.0 interface.
Not sure if it was worth it, I lost most of my apps and am still trying to figure that one out.
you've just restore from 3 to 2.2.1 with the image from Pwnage ?

Because I could not activate, the iPhone was stuck. I had no choice then to reinstall the old firmware. Nothing else worked. I had to go back to 2.2 using iTunes 8.11 (Windows Vista) because I kept getting error 1600. Once I was at 2.2, I could proceed to Pwnage 2.2.5 and the 2.2.1 software.

ya you can downgrade like that...as long as baseband doesn't change you can go to which ever version you want.
I'm starting to think that since the 2g is no longer sold and those of us who have it probably won't buy a new one as long as we have to sign contract there is no point in updating a baseband that is not broken.
1.1.4 iLiberty+ -> WinPwned -> BootNeuter -> Custom Pwned to 2.0 -> Upgrade to 2.1 -> QuickPwned
-> Restored to 2.2.1 -> WinPwned -> Upgrade to 3.0 -> Redsnow'd

I used the Pwnage v3 and updated my 2G phone to OS3. I have followed the iClarified guide closely and everything is working fine except YouTube and of couse the MxTube (my favourite).
I have searched this section but did not find anything similar except in this thread and nobody provided a clear solution.
How can I fix the damned YouTube please?
