What would I have to do to erase traces of hacking if my iPhone 1st gen needs service?

Assuming you are at firmware 2.0.2 I would load "Bootneuter 2" via Cydia. Then set Auto-Lock to never in Settings->General (really important) and make sure it does not run out of power (connect to ac adapter is the best solution).
Start Bootneuter and set all to "off" - plus Bootloader to the version the iPhone came with OOTB (if OOTB <= 1.1.1 it is 3.9 if >= 1.1.2 4.6)
Hit flash then and dont touch the iPhone, let Bootneuter do its job. May take up to 5 minutes.

Connect iPhone and Mac/PC then, quit iTunes if running or starting.
Shut down the iPhone (hold start/sleep until red slider shows up, slide to shut off)
Hold start/sleep and home for 10 seconds
Release start/sleep but keep holding home until....
... iTunes starts up and finds an iPhone in recovery mode
just hit restore the, the iPhone will be restored to 2.0.2 locked

    thats it.

What if I'm at firmware 2.1, and I don't have Cydia installed. How do I erase all traces of PwnageTool?

If the iPhone is still unlocked at 2.1 I would use Quickpwn to get cydia on the iPhone, then load Bootneuter and do the above mentioned steps. the iPhone is at firmware 2.1 then, locked and traces erased.
    hope that helps, v.
