My sister has asked me to jailbreak her iPod Touch 2G running OS 2.2.1. Could somebody tell me the best way to go about this please?

Also..how would i upgrade it to the latest OS while doing so?

You generally have to buy major OS upgrades for iPod touches. SO I am not sure how far you can get for free. I think you can go to OS 3.0 but not 3.1

Jailbreaking 2.2.1 is not so simple. The tools get simpler and better from OS 3.0 and up. I would advise investigating how you can get to OS 3.0 at least if it is free. Then use redsn0w to jailbreak.
