I can run a jailbreak with redsn0w as well and it uploads the kernel and everything, then runs the break and when its time to reboot, nothing. Just shuts off. Also the thing won't turn on for anything and gets a USB Device not recognized in windows if its not in DFU mode...
Any ideas would be great on this one.
Your problem looks to be a problem formatting the NAND, which could indicate a hardware issue with the NAND.
Try restoring an older iOS version - 3.1.x and see if that works.

this may also happen by trying to build a tin can usb ipod charger and getting the wrong placements ending up shorting or restarting the ipod

if you dont want to go through all of the trouble of trying to "build" your own itouch, you can try using ifaith, and redsn0w to overwrite the software and try to "save" your ipod
