Here is the command I use on Linux it should work for a Mac also

    sshfs root@IPADDRESS:/ MOUNTPOINT/ -o workaround=rename

Just substitute the ip and mountpoint. I don't know what the workaround is for but the script I got the command from was specific for the iphone/itouch so I always use it

    Default It does work

Okay so first you need to get sshfs since its not in Mac OS X by default. You can get it here:

    http://www.pqrs.org/tekezo/macosx/sshfs/

Then install this package, it add the sshfs commands to the Applications folder automatically.
Next you need to determine what the ip of your touch is, go to Settings, Wi-Fi, then to your connected network, once your there you can find the IP address of your device.

Then to mount your iPodTouch you need to go to command line in a terminal window on you mac and do this:

    /Applications/sshfs/bin/mount_sshfs root@x.x.x.x:/ /mnt

You will have to say yes to accept the key then it will mount it up and you can browse the directory or do whatever you like.

Of course I mounted the root directory, you can mount any one you want, I just mounted it to /mnt for testing.

    Have fun

You could also install AFPd from installer, and the iPod/iPhone will show up under Shared in the Finder sidebar in Leopard, or in Network on Tiger.

Actually, you don't need to install anything for SSH - just open Terminal in MacOS X and type "ssh root@<YOUR-IP-ADDRESS>" and then type in your password. Easy as pie.

If you just want to transfer files, download CyberDuck and connect via SFTP. It works well and very easy to use.

AFPd is another option. There's also iPhoneFS and other tools as well.
