Angry [jailbreak] restoring, does not completely remove it

So one day, I jailbroke my iPod, but I didn't like so I just restored.
Yesterday I re-jailbroke my iPod, and installed mail, and my account i had set up the other day was still there.
How do I COMPLETELY REMOVE the jailbreak?????????

    Sorry for my aggressive tone.
But I did that, and it still had the files from the previous jailbreak.
