yes, just plug in your iPod, right click on iTunes and do "Backup"..
plug in your iPhone then do "Restore from backup..." and restore using your iPod Touch backup.
This only restores bookmarks, contacts, mail, and springboard settings. all jailbreak apps will be lost.
you can transfer them via SFTP if you want to save those as well.
