will just deleting mail accounts and choosing replace all information on this phone worK? with all the news about apple's recent actions concerning not signing the old firmware, even though i'm talking about a 3G not a 3GS, i want to make sure i can just turn the iphone over and sync it to my wife's laptop (it would replace a 2G she currently uses). will that be enough to give her a clean mail and calendar. if i use erase all content and settings...i'd have to jailbreak again. what options do i have

3G iPhone can still safely be restored to OS 3.1.2 or any prior version (but baseband can't be downgraded for 99% of 3G iPhones so still pays to be careful about upgrades)

If you just want to get mail and calendar (and other things that can be synced), then it should be sufficient to use the "replace information on this iPhone" option under the Info tab.
