I understand that a2dp is coming to the new iPhone or with the 3.0 software. I don't really care about stereo music, but does this mean that I can finally listen to podcasts via a Bluetooth headset ?

Don't think so, havent tryed it, works ok through bluetooth stereo though
No, you can not currently route music to a bluetooth headset with the handsfree profile, however if you have a headset that supports A2DP (Jabra has a few, as does Motorola), than you will now be able to even though you have a monaural headset.
Although, given that this functionality now exists for certain bluetooth devices, it is only a matter of time until a jailbroken hack makes it's way to your iPhone to enable this functionality.

Or just use the old *#301# hack, it still works even on a 2G iPhone running 3.0 GM with a mono headset (Motorola H500).
