Go to iClarified for great tutorials; step by step and pictures. Good luck!

You can upgrade to 3.0.1 and unlock right now.

Go to iClarified. They've got very easy tutorials

its better to go for restore rather than update in your case.

Connect your iPhone and Mac/PC, start iTunes 8.2.1 and hit Restore. This will restore your iPhone to iPhone OS 3.0.1 - it will be locked then.

    Then goto
iClarified - iPhone - How to Jailbreak Your iPhone 3GS on OS 3.0 Using RedSn0w (Mac)
    or
iClarified - iPhone - How to Jailbreak Your iPhone 3GS on OS 3.0 Using RedSn0w (Windows)

Download the tools needed, all the links are in there. This will be the firmware file 3.0 that is used for jailbreak and activation. Works even when your iPhone is at firmware 3.0.1 (above). Jump in at "Step three" and do the tutorial.

Once done the iPhone will be jailbroken and activated but not unlocked.

    Continue with
iClarified - iPhone - How to Unlock the iPhone 3G, 3GS Using UltraSn0w
    to unlock.

Once done connect the iPhone to iTunes. iTunes will offer to "restore data from a backup". Dont, instead choose "setup as a new iphone". When done sync the iPhone to back your data.
