You may try to do it by just 'Shift + Restore' in iTunes, no need to enter DFU mode.

I have tried that too with 2.2.1, 3.0 and the latest firmware but I only get errors.

Seems to me that your phone was somehow left as non-activated.
I think the best way to solve the problem is to use Pwnage tool on mac. If you don't have other way to solve it you may try the new Jailbreak method by Goehot, but of course, at your own risk:

First, Pwnage 3.1.4 is for Mac only, however, if you can find one that is already custom built with a Mac, then you could use Windows to restore it thru iTunes. Press Shift + Restore, click on the custom ipsw file you downloaded, not the file from apple. It should work.
If all fails, try to youtube it search iphone 2g/3g 3.xx jailbreak. There are tons of good videos. Good luck.
