I bought this phone when they were brand new jailbroken and unlocked, and had to keep unlocking it with every new update so i was just wondering the best way to update it now? since i've been off the ball with the 2G for a long time some links would be great! thanks!

The unlock you currently have is permanent it will survive a restore or update.
What you need to do after each restore (and most updates) is to jailbreak and hacktivate. This is easily achieved with redsn0w.
The only complexity is if you want to retain any existing data on the phone. While it is possible to update and retain your existing data - I recommend you don't do this.
Instead you should just restore to 3.1.3 then jailbreak/hacktivate with redsn0w 0.9.2 (or 0.9.4) and a 3.1.2 IPSW. (instructions are on iClarified)
Then set the phone up as new in iTunes. This will give you the most stable result.
Also, I recommend you install unique push certificates (via pushdoctor or pushfix.info) - as the battery life can be affected by the lack of unique push certificates when you hacktivate.

Don't you know how to use Google? I gave you the keywords?
iClarified - iPhone - How to Unlock/Jailbreak Your iPhone 2G on OS 3.1.3 Using RedSn0w (Windows) instructions are nearly identical if you use a mac, just grab the mac version of redsn0w 0.9.2 or 0.9.4
You don't need the bootloaders, you need to also download a 3.1.2 IPSW (the picture in step 5 shows that you browse to a 3.1.2 IPSW but the preparation section in the guide forgets to mention you should download the 3.1.2 IPSW in advance)
Download link for 3.1.2 IPSW can be found here http://www.hackint0sh.org/f127/22056.htm
In step 7, the custom bootlogos are optional
Do not tick the "unlock" option in step 7
Step 8 should be skipped because you didn't tick unlock in step 7

Please read http://www.hackint0sh.org/f137/32703.htm and learn to use the correct terminology - your phone is NOT locked, but you need to hacktivate it.
This is a topic that has been explained and documented hundreds of times. Thread closed, Duplicate
