1: Upgrade to 3.1.2 (not 3.1.3) !!!! Don't ask why, just do it
2a. If you're running Windows ... update/jailbreak with Redsn0w. Tutorial:

---- or ----
2b: If you're running a Mac update/jailbreak with PwnageTool. Tutorial:
iClarified - iPhone - How to Jailbreak Your iPhone 3G on OS 3.1.3 Using PwnageTool (Mac)
- Note: in the above instructions, substitute 3.1.2 for 3.1.3.
Use Pwnage Tool (best), or Redsn0w (almost as good)!!
Don't use Purplerain, snowbreeze, green goblin, whitelightening, bluemango, or anything else!
Follow the instructions VERY carefully. Read, read, and read it again. It will work the 1st time. If you don't understand something --- DO NOT GUESS! Understand everything BEFORE you begin.
Once you're done, restore using the 3.0.1 backup you made at the beginning.
Then run Cydia, update essential, install ultrasn0w (for the carrier unlock).

if you use pwnagetool, install ultrasn0w for unlock, if you use redsn0w use blacksn0w for unlock
Also consider Push Doctor even if you don't use push notifications, this can help with battery life.
If you restore from the iTunes backup - and encounter any battery life or stability problems then I strongly suggest you perform the 3.1.2 restore/jailbreak again and set your iPhone up as new. This means you lose SMS and call history but it usually fixes any instabilities caused by restoring an iPhone backup taken from a jailbroken iPhone.
