While this is *technically* possible on your device, it is a very bad idea.
Let me repeat the one true rule of disk cloning. Only the vendor who created the OS has enough of a clue about which files can be excluded or need to be modified in a clone/restore scenario. Anyone else attempting this will likely come across issues/gotchas that may not be visible straight away (even when restoring to the same hardware)
In the case of Apple/iOS/iPhone - the solution Apple decided to take was a combination of - standardised OS restore image (with all the proper tweaks to ensure that it works properly) plus the "restore from iTunes backup" option. This works fantastically for a non-jailbroken user but cannot backup/restore the changes made by most Cydia installs.
So.. what I would recommend is to extend the standard functionality IPSW + restore from iTunes backup.
use pwnagetool to make a custom IPSW that also bundles the Cydia apps you need. You need to include any dependencies also.
Then restore the custom IPSW and once that is done, restore from itunes backup.
That *should* get you 99% of the way to the solution you are after (and is how I do it)
