.DS_Store file has always been deleted via Terminal, .bundle file put in a folder named Payload.
I don't have a folder Device Support. Wether in ~/Library/iTunes/ nor anywhere else on my Mac. But anyways, I get the error even on a PC. So I think that's not it.
Maybe there is something wrong with my phone? But what? It's a factory unlocked iPhone 3G 16GB white from Italy, never has been jailbroken, has always been taken care of, freshly restored.
Haven't tried a different USB port yet, but I'm not getting my hopes up.
Is there a way I can put the carrier bundle in the firmware .ipsw file? After making a backup copy of the file, I managed to decrypt the System ramdisk .dmg using vfdecrypt and the help from iPhone Wiki. How can I encrypt the .dmg file again?

If the iPhone is jailbroken and OpenSSH installed onto it, you can SFTP with Cyberduck into
and drop the .bundle in there. To be on the safe side make it chmod 755 (executable).
You have to create a symlink for the bundle then with Terminal. SSH into the iPhone, goto the above directory and create the symlink.
Here is a how-to find out about the MCC/MNC needed for the symlink.
the command is like this one
ln -s name_of_custom_bundle.bundle MCCMNC
MCC/MNC can be found (after dialing *3001#12345#* in the keypad of the phone app on the iPhone) under "MM Info" -> "Serving PLMN" (they are labeled, like on 2.0, "Mobile Country Code" and "Mobile Network Code". Same as above: If MNC has only one digit add a zero in front.

I am pretty sure that your problem is caused by the 2.0.1 backup file. I would restore and do not use the backup.
I don't want to jailbreak cause I don't need it. That's the whole point with these carrier bundles. Easy Apple way without 'nasty' hacks.
I guess I'm stuck for now :-(
I'm talking about iPhone OS 3.0. Besides, I never used any Backup to restore my iPhone. If I restored I did it only with the original software ... all other settings were put in manually (hard finger work on iPhone :-)).

My friend had the same prob. What he did was downgrade to iTunes 8.2 Beta. I hope that helps.
Having just read this whole post the OP seems to have done everything correctly. I don't think downgrading to the beta will do anything except allow plists to be selected (which the OP has obviously already done) but might be worth a try.
I do not know what to suggest which is a bit concerning as I can normally at least throw something in to try.
A possible alternative is to visit help.BenM.at in Safari on the iPhone and install the settings from there?
But I would be very interested to here if someone can come up with a 'proper' solution.

Well, in the end I didn't really find out what exactly was the problem.
But since I managed to build an .ipcc file with the new Carrier Bundle Generator for 3.0, and that actually worked without any transfer errors, I assume there had to be something wrong with the .ipcc file I created manually.
