Is there any way to get the stock 2.1.1 firmware back? I have successfully downgraded from 3.0 to a custom 2.1.1 firmware, but would like to get back to the stock Apple firmware. I've heard others claiming they've accomplished this, but I keep getting errors while restoring.

QuickPWN didn't work for me. I had to use PWNage tool instead.
You may have to use a USB hub or use the trick over on the dev team blog to get DFU mode to work if you've got 10.5.6.

Registering the Phone
How are your registering the phone, I thought you needed to register it as a development device through Xcode. I have an account as well but can not register the device in Xcode because it is not an activated device, I can't activate it because it isn't registered as a development device.

Do not install the drivers, unless you are willing to restore it back later.
Get a USB 2.0 hub, connect to your mac and try connecting to the hub port. The USB driver for the Intel based ports on the macs is buggy on 10.5.6. But the ports on the hub will use a different driver and will work.
This will make it work.

do this:
Download and extract iRecovery. This is a console app to be run in terminal. Extract it with finder.
Copy libusb-0.1.4.dylib to /usr/local/lib and chmod both iRecovery and the dylib to 755 using chmod 755 /usr/local/lib/libusb-0.1.4.dylib and chmod 755 iRecovery.
In terminal, run iRecovery -s
At the iRecovery prompt, type: fsboot
Wait, iPhone should boot. If not, type fsboot a second time.
ctrl-c or close the term. You are done with iRecovery.
after this your phone should work.
PS i did not tried this before since i own a mac and pc.

I still have not managed to downgrade my iPhone 3.0 to 2.2.1
I use a mac and I don't have a PC. Moreover I'm french and i have
some difficult to understand...
I summarizes, When i Try to downgrade 3.0 to 2.2 with itunes, I get
a "error 21" (and not 1106) Error message appared at the beginning of the
process and i think that the 2.2 have no time to settle.
So I try to use Quickpwn unsuccessfully (quick don't find my phone)
SO i Try to use Pwage and create a custom 2.2, but when i try to install this custom, Itunes give me this error 21...
Can someone help me with precise Tuto ???
Or can someone register in the official SDK 3.0, It will be very nice...

Downgrade works, but there's one problem...it says the software on the iPhone is too old to restore a backup after you've downgraded. You can change the version number in info.plist but then it says it's corrupt.
Is there any way to restore a 3.0 backup to a phone that's on 2.2.1?

that is just asking for trouble. although now that im back in 2.2.1 i've notice that some things just arent working, i can recieve text messages, but it locks up and times out when i try to send them

Is there a need to be concerned about future firmware upgrades prior to 3.0 or the official release of 3.0 in terms of the baseband firmware possibly being newer, considering that I'm on AT&T and have no intention of unlocking? Obviously the 3.0 baseband is newer than that in 2.2.1 by default.

Lucky I had a 2.2.1 backup stored away in Windows under previous versions. It's from a few days ago, but it'll do.

im definitely having some remorse for installing 3.0, eventhough im back to 2.2.1 and have mostly everything working again i still cant restore to any firmware succesfully on my mac anymore, need to do it on the pc downstairs and that is total crap.
