Not enough details for us to really give you an answer.

You need to tell us what app you uninstalled from Cydia
OpenSSH only requires OpenSSL as a dependency

I don't think there is really a need to ssh your phone unless you really need to get something off or if you want to add something to the phone. I'm just a casual jailbreaker and sometimes just mix and match themes for my phone. Did you maybe uninstall ssh toggle app?

Now I think about it, if the original poster was using SBSettings, it's possible they have toggled SSH off via that accidentally.
However without more details from the original poster it's hard to know what the real cause is.
Agreed, SSH is not recommended to the average jailbreaker, it's really only useful if you are a developer or have some very specific usage scenario that requires it.
For most uses, an AFC2 client (diskaid, ifuntastic, iPhone browser etc) is a better choice.
One usage scenario for SSH is fixing incorrect permissions on files/folders, however the jailbreak app iFile (not free, but has a trial period) is what I would recommend to the average user.

Yes I agree about ifile. That is primarily what I use if I do need to locate a certain file, but I still have OpenSSH if I want to put something on my phone. I don't get too involved with it because I know I will mess my phone up.
