All I can tell you is that I used redsn0w to jailbreak and I have the folders available. We've had some serious issues in the past with Sn0wbreeze causing problems and I'm hoping this isn't another case of that.
I believe Cydia still has the 'afc2add' package, that adds the afc2 service, which will break you out of the filesystem sandbox. I'm not 100% certain whether or not it has been updated to iOS 5 though, since I didn't need to use it as I jailbroke with redsn0w... You could try that, but I do recommend backing your stuff up first just in case your iPhone doesn't like it.
You may just want to restore back to factory (use tinyumbrella to block baseband update) and then use redsn0w to jailbreak...
