Have you got a SHSH for iOS 4.1? Apple has nearly stopped issuing 4.1 SHSH - without this it is IMPOSSIBLE to restore to 4.1
Use The Firmware Umbrella - TinyUmbrella to backup your SHSH.
If you rely on unlock, then you should use TinyUmbrella to prevent baseband upgrade from 4.0.2 to 4.1
Redsn0w 0.9.6betas, greenpois0n, pwnagetool and limera1n can all jailbreak 4.1

If you want to jailbreak or unlock then you should NOT update your OS to the latest version (4.2.1)
Other than that, I answered your questions related to 4.1 already. Re-read this and ask for specific clarifications if you don't understand.
Also, stop wasting time and get your 4.1 SHSH

There is no single tutorial - also you have not answered if you need to unlock or not.
For the iPhone 3GS and iPhone 4 the latest version 4.2.1 is a TETHERED JAILBREAK, this means that every time you restart your iPhone or the battery goes flat, you will need to find a computer to kickstart the boot process. This is why I said to avoid 4.2.1
To go to iOS 4.1 requires that you have SHSH - now that Apple has released iOS 4.2.1 they have stopped signing iOS 4.1 (i just tested this with my iPhone 4) so you need to have already saved your 4.1 SHSH (a few days ago)
TinyUmbrella will tell you if you have a 4.1 SHSH. If you don't I recommend strongly that you stay on 4.0.2 and save a 4.2b3 and 4.2.1 SHSH asap (in preparation for a future untethered 4.2.1 jailbreak)
Your best option is to stay on 4.0.2 (recommended) and wait for TinyUmbrella to be updated to better support updating to 4.2.1 without upgrading baseband on the iPhone 4
Option two is that it is possible (but trickier) to go to 4.2.1 and not upgrade baseband, the tools for this are beta quality and you will have a tethered jailbreak - you will also likely need to restore 4.2.1 again to go from the tethered jailbreak to untethered when it is finally released.
