    May not necessarily be 'field test' mode. There are several packages you can install that replace your signal bar with a dBm signal to noise ratio in specific numbers. Have you installed any of them? They should be toggleable in Winterboard. If you installed on a previous iOS revision and upgraded and the setting is still intact, re-install the program that let you change it, change it back, then uninstall.
