If you authorize the new machine against your iTunes account, it will copy all legitimately purchased apps and music from the phone to your computer when you tell it to transfer all purchases (just don't set up as a new phone or sync when you connect the first time). Besides that, if you want your call history / etc., you can use something like WinSCP to connect to the phone and pull off the database files from /var/mobile/SMS (etc.) and then copy them to the new phone.
The rest of your media you can pull by using WinSCP or DiskAid and pulling out of the Media folder. The files will be renamed, but you can re-import them into your new Mac's iTunes and tell it to automatically put files in folders based on their name and artist and it will automatically rename them. Alternately, you can use something like Tag & Rename to quickly rename the bunch as the ID3 information will still be valid.
That should let you sync just about everything except for a few settings that shouldn't be too big of a deal.
Good luck!
