Never jailbreaked/unlocked before - possible?
I have never jailbreaked or unlocked my 3GS before - I am running 3.1.3. I am only interested in unlocking so that I can use the iphone overseas (Italy).
Possible? If not will it EVER be possible?

Yes it will be likely possible in the future. Possibly before June/July timeframe
In the interim. Get your SHSH for 3.1.3 via firmware umbrella
Avoid upgrading the iPhone OS if you can.

Thanks - I have had a look at the site for Firmware Umbrella and see that I can save the SHSH locally. What exactly is the SHSH?
Furthermore - my baseband is 05.12.01 - is this a problem?

SHSH is a unique signature that is created by Apple. It is unique to your phone and is only valid for a specific iPhone OS version.
With a local copy of this SHSH (or in Cydia's SHSH repository) you can always restore your 3GS to the version of the iPhone OS that SHSH is for.
When Apple releases a new iPhone OS version, they stop signing the previous iPhone OS version a few days later. This forces people to run the latest iPhone OS.
Jailbreaks and unlocks rely on exploits that Apple will close once they find out about them. So forcing people to upgrade helps reduce the amount of people who can jailbreak/unlock
A saved SHSH for as old an iPhone OS version as possible is a powerful tool in staying jailbroken/unlocked.
Although 3.1.3 can't be unlocked or jailbroken right now, it (or 3.2) will eventually be unlocked and jailbroken (iPad is not so exciting to jailbreakers, so I predict that the next unlock and jailbreak will come when the next iPhone is released).
