No it will not be straightforward or simle. It is not recommended and it does not really save very much money. AT&T make this hard to do without a lot of extra fees for cancelling the contract

Assuming you manage to get a 3GS from the US. You can jailbreak it an unlock it. However it will be a tethered jailbreak (meaning each time you restart the iPhone or the battery goes flat you need to connect it to a computer to kickstart the iPhone to boot)

The unlock for current model 3GS and 3G iPhones introduces a much higher risk that you will lose wifi functionality. There is no solution for this aside from claiming warranty with Apple. Of course Apple will not honour the warranty of a USA phone in the UK especially if it was never activated with a legitimate carrier.

If you want an iPhone in the UK, get it in the UK or buy a factory unlocked iPhone from Australia or Hong Kong, these work anywhere in the world with any carrier that supports the most common 3G frequencies.

Not trying to thread-jack, but is there a post on the forum specifically about those wireless issues? I'm quite intrigued about the wifi functionality issues and have had a few users at my company experience these issues after unlocking/jailbreaking and while I absolutely cannot condone jailbreaking in a corporate environment, finding a solution to the problem would be good -- and I'm not having any luck searching and finding it on the forums so far.

The wifi issue is not related to the jailbreak but more of an issue with using blacksn0w unlock with baseband 05.11.07. Not everyone experiencing this issue but I believe it affect 20% of users. YMMV.
BTW, it is caused by a "race condition" which causes the wifi not to initialize correctly. No ETA for fix on this from geohot.
