Automatic Update Dam!
I'm new here so better say hi first.
So I have just got myself an Iphone 3Gs 8GB for the first time and was doing some research about Jail Breaking the phone, but I forgot about the Automatic Update in Itunes, and yeah, my Iphone got updated to, 4.3 (8F190), and a Firmware 05.16.01.
So have I made it really hard to revert back to 4.1 so I can JB the Iphone, and are there any Recent Tutorials on getting a Newbie up and runing on how to JB.
Any advise welcome.

Sorry about that, I just found the Tutorials. But being a Newbie if you do have any advise which you think might help me then please let me know.

Unfortunately, the iPhone 3GS requires an SHSH to restore to iOS 4.x revisions, and the only iOS 4.x revision that is being signed for the 3GS right now is 4.3. You could put the device in DFU mode and restore 3.1.2, then jailbreak. Alternately, hang on for a few weeks -- there will likely be an iOS 4.3 jailbreak released soon after iOS 4.3.1 is released unless iOS 4.3.1 is susceptible to the same jailbreak exploit and the dev-team thinks that they can hold on for the iPhone 5 launch.
Since you're new, I imagine you probably don't know what an SHSH is. The link in my signature has a pretty lengthy read about what they are and why they're needed, I do recommend *anyone* working with iPhones these days be familiar with the term and what it means to them from a jailbreaking responsibility perspective -- too many times do we see posts on the forum where people have upgraded without saving their SHSH and there really isn't too much that can be done to undo those types of things. Worth the time up front doing the research to save you a lot of time in the future.
In all likelihood there will be a jailbreak for iOS 4.3 either soon after 4.3.1 is released or soon after the iPhone 5 launch.

The 3GS requires a SHSH for all iOS versions not just for iOS 4.0 and higher.
It is the iPhone 3G that only requires SHSH for iOS 4.0 and up

That's right. I just finished re-flashing my 3G for my buddy that I mentioned in the T-Mobile thread so I've had 3G iPhones on the brain. As pretty much always, Olethros is 100% correct. The 3GS requires an SHSH for any iOS restore and it is the hardware based check and not the software based like the 3G.
