3GS Stuck on the "emergency calls only" screen after erasing all contents
Hi
While deciding to unlock/jailbreak my wifes 3gs i did "erase all contents and settings" ( I know i shouldnt have, but i figured since it hasnt been jailbroken it would just do a factory reset, im ready for a flaming here
).
Now im stuck on the emergency calls screen/connect to itunes logo.
Before doing the above, it was on FW 3.1.3 and baseband 05.12.01.
Ultimately, i want to restore the iphone to a working state and then do a carrier unlock but itunes doesnt recognize it now saying "iphone cannot be used, software not installed, please uninstall itunes and reinstall".
Anyone know what my options are here?

Have you tried reinstalling iTunes? What version do you have installed?
If the phone has FW 3.1.3 as you said, the Emergency call screen would require you to connect to iTunes to activate it. Try jailbreaking the phone. This used to work on 2nd Gen and 3rd Gen iPhones if I remember correctly.

yes i have tried reinstalling iTunes. I have version 10.5 installed. It doesnt recognize the 3gs.
Also, i have tried restarting apple mobile service and ipod service in services.msc

This is expected behavior and why we never recommend hitting 'erase all content and settings', but you know that already so I won't kick the dead horse any further. You will need to put the phone into DFU mode (google if you don't know how) and then restore iOS to it. It will not restore successfully while booted as it is now, and it will not restore successfully in recovery mode -- it must be DFU mode.

iTunes is recognizing it now after updating to the latest version.
What version iOS must I restore and will the latest redsn0w suffice to jailbreak it afterwards?
IM getting an unknown error (3194) when restoring 3.1.3.
Ive tried adding "74.208.105.171 gs.apple.com" int he host file but i still get the 3194 error.
This is wrecking my head..

Ok.....so after updating iTunes to 10.6 it now recognizes the 3gs.
After thinking i had deleted the iOS, I managed to boot it using Tiny Umbrella.
Still getting the unknown restore error though (3194) no matter what version i try.
This is the only log i can find (iPhone updater logs arent there)

You will get a 3194 if you attempt to restore any version of iOS other than 5.1, as Apple is only signing 5.1. If you have SHSH on file with Cydia (use TinyUmbrella to find out), then you can restore to iOS 4.x that you have SHSH for. If you don't have any SHSH, you'll need to restore to 5.1. Also, you will get an error if you attempt to restore iOS 5.x and you have a line in your hosts file pointing to gs.apple.com. If you're restoring 5.1, remove any host files modifications.
I suggest you do some research on SHSH files -- they're important, and if you intend to use and jailbreak your phone, you'll need to know what they are, how to use them, how to obtain them, and when to use them. You can click on the SHSH link in my signature for a very in-depth and technical read, or you can search through the forum or google to find more high-level information.

Thanks Nick for your detailed reply.
Just today I have got it sorted.
I used Tiny Umbrella to "fix recovery" and it booted back to its original state. I then used Spirit to jailbreak and Ultrasn0w to unlock.
I will take your advice and read up on shsh blobs.
