I've tried to see what happens with this. I put an O2 Ireland sim card (which is just a pay as you go sim I got a year ago) into my AT&T locked iPhone. Basically it tells me itís the incorrect sim and gives me two choices: select "ok" or "unlock". When you click unlock it comes up with the keypad and says I have 3 tries. I haven't tried to enter anything so I don't have any info past this.
Mine doesn't give the option to unlock when I install an unsupported sim. I tested my wife's iPhone sim in mine and it worked (same network). Her visual voicemail even transferred over.
Other Softbank sim's don't work though.
I sold my AT&T iphone to a friend. I'll have to get with him and see if that sim will recognize in my phone or not. Only problem is his is the 1st gen iphone. So, the sim is also from the first gen.
So I just realized that the unlock option it was showing me was because my sim had a pin-lock on it. I entered my pin but now I get no service with the O2 sim in my AT&T locked iphone. Interesting though that there's no message about an incorrect sim that's shown.
ok so i put an activated AT&T 3g simcard (from my friends AT&T iphone 3g) in my Rogers canadian iphone 3g...it said there was no recieption..i then connected the iphone to the computer and itunes opened..it gave me the "invalid sim". Therefore it will not work on other carriers..
You can also buy it unlocked and without a contract in New Zealand and the Czech Republic.

I do get a pop up saying there's a carrier update (which I believe is just APN settings). I denied that update but still no recognition that it's an incorrect sim and no service.
My theory as some posts say is to sync for Activation and voila. Also, this could happen for Mexico only or for Norht America SIMS only, and may differ from other World regions as carriershave different kind of integration between them.

It is impossible , then people will buy the phone from different countries then sell with an expensive price. As far as I know iTunes unlocks the phone looking out the carrier part number as written in this page http://support.apple.com/kb/HT1937 .As you see.
