Not sure if the 4.0 update will fix your no service problem.

The three updater logs you posted were all using too old a version of iTunes. You need to install iTunes 9.2 (or higher) to restore or update to iOS 4.0 - plus you need a soft-shsh (which Apple is no longer issuing for anything except the non-jailbreakable 4.0.2)

If you want to try 4.0 use pwnagetool/custom IPSW

Do you rely on software unlock (ultrasn0w)?

You shouldn't load ultrasn0w unless you need it (ie you are using a SIM from another carrier than the one your iPhone is locked to). There is a SBSettings toggle to disable ultrasn0w when it is not required.

See iClarified - iPhone - How to Jailbreak Your iPhone 3G Using PwnageTool (Mac) [4.0] for a guide to pwnagetool.

When trying different versions of iTunes, you need to be sure to properly remove all traces of iTunes and restart after uninstall and install.
