My girlfriend has a 3G 8GB version on her contract.
She's insured, so I was wondering if I get her to claim she's 'lost' her iPhone, is there anyway I can unlock the handset once it's been locked by the network provider.

This is either illegal or very grey. This forum does not encourage the discussion of illegal matters.
This won't work anyway, the phone will be IMEI blocked by the carrier and you will end up with a brick.
