Default [iPhone 3G] Can you restore to older firmwares?

Hi, im going to get the new iPhone in after a week or two after the unlock comes out for use on T-Mobile, but many people were saying 2.0 was still buggy with the latest build. So my question is can you restore the new iPhone in general to older firmwares such as 1.1.4. And if you can, does 3G still work?

i know, but i want to upgrade to 16 gigs anyway, and im going to switch to at&t later in the year when 3g rolls out where i live, so id rather do the early termation contract and pay $600 so i dont have to wait for the subsized version to come out and save a $100 since the subsized is $700. i also like the new gps features and the new speakers, flush jack, and etc. And the unlock is rolling out soon, and if it doesnt, id gladly sell it on ebay and make a couple extra hundred bucks

Also if i go to an area where tmobile provides 3g, y wont it connect to 3g there?
