Erase all content and settings - no OS Help!!!
Have iphone 3G version 3.1.2 - firmware 5.11.07. After having been jailbroken with blackra1n it had "all content and settings erased". Mine isn't a spinning circle of death...it went ahead and died. No spin there. Should I try restoring with iTunes and if so what version?

Erase all content and settings also erases the OS, so yes you need to restore 3.1.2 - this is straightforward on the 3G iPhone. Do not restore OS 3.1.3 if you rely on blacksn0w for unlock.
If you need to jailbreak again, I recommend you re-jailbreak with redsn0w as blackra1n has many issues that are not present in redsn0w.

If you rely on blacksn0w for unlock - you can reinstall that via Cydia iClarified - iPhone - How to Unlock the iPhone 3G, 3GS Using BlackSn0w
