so this is what i did:
oh, btw: you need a mac AND a PC to follow this "guide" :p
1.1.1 ootb and brandnew
forced to downgrade to 1.0.2 via iTunes, got error at the end as expected, closed iTunes
iPhone now in recovery mode
opened iBrickr and clicked boot iphone. this just kicked it out of recovery mode and now showing activation screen. closed iBrckr, no longer needed.
started apptapp and activate.bat, reboot phone
connected to wifi, note ip of phone, set autolock to never
installed community sources, bsd subsystem, open ssh
moved new anysim to applications folder using winSCP and set ALL files to 0755, reboot phone
put in my own sim, run anysim, reboot phone
connected to independence and installed dropbear SSH
performed the "pre-1.1.1-update"
quit independence, start iTunes, update to 1.1.1 without a hassle
connected again to independence, activated, and jailbreaked again
reboot, et voilą
worked like a walk in the park
everything works, execpt youtube (as expected). so now i gonne fix that

the new iNdependence can help you to fix the issue. There is no need iBrickr.
And, YouTube should work if you used the latest iNdependence

Why did you run anySim before re-updating to 1.1.1? Can't it be run after the update?
I'm seeing the process as this :
1. Following the iNdependence 1.2.3 instructions for iPhone 1.1.1, downgrade to 1.0.2
2. Still following instructions, upgrade to 1.1.1
3. Still following instructions, jailbreak the phone
4. Still following instructions, install SSH
5. Install anySim on phone
6. Run anySim
7. Reboot iphone and enjoy
Or am I missing something?

back in a few minutes.....
if you had used independence for activate your youtube will be already working
I used PC only to run PACAY (when in 1.0.2) but for 1.1.1 independence is very better because it fixes everything.. no more Windows required
