Double-clicking the home button takes you to your phone Favorites. That's saved me a lot of wasted time.
Double-clicking the space bar also puts a period at the end of a sentence. Another serious time-saver.
I've also timed the speed at which applications open in 1.1.1 vs 1.1.2.
1.1.2 is faster.
There is no reason to stay on 1.0.2. It takes less than two hours to backup, upgrade and redo all your files/applications.
Besides the time savers and speed, the main reason to update is stability. All the 3rd programs coming out are designed for 1.1.1 and 1.1.2. They'll work better if you're fully updated.
And, considering that those 3rd party apps are likely to be constantly updated for bug fixes, it's definitely worth updating your firmware. 1.0.2 might be stable, but the 3rd party apps are more stable in 1.1.2

I'm in the same boat with the_gts -- happy with 1.02 even though I know that the Anysim 1.02 has damaged my baseband. Having read thoroughly, I saw no reason to make the jump to 1.1.1. However, the performance improvements with 1.1.2 have me leaning to upgrade. Only 2 items give me pause: 1) it took me a fair amount of time to get the internet working via Edge with my local carrier here in Ecuador using the plst mod and proxy.pac file. Although I know that there is a "world fix" for the issues of non-standard carriers, I do worry about loosing this capability; 2) the Anysim "u" version, though is certainly working for many, has been suggested by some to be a bit premature. Based on the success of several others, it seems fairly solid though. Thoughts on "u?"
If I make the jump, I will post my results here. Thanks for the comments.
