I was wondering the same thing.
In another post it says it is OK to delete this folder., but I tried to delete it but it said sbin was in use.
Is there a post 1.1.2 upgrade cleanup guide?

Yea that other thread is the same as this one, don't know why there's two. I deleted the folder and it was fine. Make sure you've turned off OpenSSH in the SSH.app and also to delete SSH.app from applications after you've turned it off then try a reboot and then delete that folder.

I jailbroke my phone through a Mac with jalibreak.jar and it installed SSH automatically and had an SSH icon on the phone, which can be used to turn it off. As earlier suggested, I also immediately deleted it, as I didnt like a button only for SSH, when I seldom use it only.
Instead there is Services.app that can also be installed through Installer, it allows turning SSH, Bluetooth, WiFi. and Edge on and off. that you can use to turn it off if you dont have the SSH button on your springboard.
Cheers
