Hey man,
I think you are using the newer version of the 1.1.1 image that already has the tiff bug fixed, thats why you cant jailbreak using the .tiff exploit.
Many other people have it working.

could you not cut out this step, and say follow independence instructions and downgrade straight to 1.0.2
then follow the rest to jailbreak and re-upgrade
please correct me if im wrong, i dont know much about unlocking (does jailbreakme.com work on virgin 1.1.1?)

From what I read, this guide and this website tells you how to downgrade a 1.1.2 iPhone, so then you will have a 1.1.1 iPhone with 1.1.2's baseband, so you will unlock, but you wont have a 1.1.2 iPhone, you will have a 1.1.1 iPhone?

You can downgrade your baseband to 1.0.2
You just need to go from 1.1.2>1.1.1>1.0.2

Just worked fine for me with a brand new UK iPhone picked up from an O2 shop this afternoon, although I'd recommend the following guide for the restore part, as it's a little more detailed:

Also note that, when it comes to restoring your own chosen FW in iTunes, it's CMD + ALT while clicking the Restore link.
And, as for getting the right firmware, go here:

One final point, the small part where you just need to boot iNdependence in order to get to the 1.1.1 start screen - the app (1.25) does NOT support iTunes v.7.5, so DON'T INSTALL it
Luckily, I'd only updated iTunes on one Mac before I discovered this.
