I've been like you before so I know your feeling right now. Don't worry.
Ok, this guide will show you how to fix that:
1. When you see that apple logo, connect the cable and run iTunes. Try to turn it off (Press 2 buttons at the same time untill the phone completely off).
2. Now turn it on again, when you see that f**kin' Apple again press 2 buttons at the same time. Keep pressing it untill the screen goes black but keep preesing untill the Apple logo comes up, release the Sleep/Wake button and wait. It'll let you into DFU mode.
3. Do the same thing like you do it before: downgrade to 1.1.1, jailbreak, install OktoPrep, update 1.1.2, jailbreak again....etc
Try your best to force it to DFU mode. I did it like 10 times but fail and the next morning I did like 2 times and I successfully force it to DFU mode. Feel free and do it.

If you have your SSH installed and WIFI working, try to PING your previous iPhone's WIFI IP address (The IP address can be found in your Wireless Router's status page your iPhone connected with). Try SSHed in, issue following:
Code:
launchctl unload -w /System/Library/LaunchDaemons/com.apple.CommCenter.plist
bbupdater -v
launchctl load -w /System/Library/LaunchDaemons/com.apple.CommCenter.plist
You you see Home screen if you are luck. Then, you can reboot it or force to poweroff and restart.
I was once stuck in boot with spinning Apple logo and solved in this way without restore.
