put phone in DFU mode.
Full restore 1.1.1 onto the phone.
jailbreake/activate phone again (http://jailbreakme.com) or using vomer's tutorial to do so.
NO NEED to run anySIM 1.1 again because your baseband is already unlocked.

If the phone in DFU mode, when you connect to itunes, itunes will detect the DFU and ask you to restore. Here, you hold shift- click on restore and select the 1.1.1 firmware image file.
May be you did not put the phone in DFU correctly.
edit: shut down phone. hold power + home at same time, when the apple appears, let go of power and continue to hold home. Keep holding until it enters DFU. run itunes, connect phone.
