I used the ModMyIPhone method yesterday and was able to change my carrier specific settings from AT&T to T-Mobile.

Will this work for Canadian users?

Well, for one, *#123# is the number you dial to find out if you're on the Fido network or the expanded network.

I've created a Fido Carrier Settings. I didn't take a screenshot, but this is what it contains:
