I'm not sure what that has to do with the WiFi. You probably have to jailbreak the 1.1.2 BEFORE doing the unlock, so no...However, isn't there already ways to do it without WiFi? Just walk over to an apartment complex, sit down, and steal someone's WiFi.

I don't think there is a way without wifi. And I don't believe there's going to be a way to unlock without jailbreaking. The jailbreak makes it possible to install software that then unlocks your phone.
Unless a future new fix manipulates iTunes, the communication between iTunes and the iPhone or there's a way to communicate to the iPhone directly (without iTunes) you'll always have to jailbreak and this currently only works with a wifi connection.
I suggest you remove all mac-filters and encryption from your wlan and if you don't have your own, go find one. I am sure you know someone who knows someone with an unsecured wlan
