I have an iPhone 4S currently on iOS 5.0. Can I restore it through iTunes with an iOS 5.0 restore file from Apple? I don't have my 5.0 SHSH blobs on file with TinyUmbrella.

P.S. I'm on Win7.

No. There is no known method to restore to a version of iOS that Apple is not signing for the iPhone 4S, nor is there a known way to restore to 5.0.0 on any 3GS/4/iPad as SHSH do not presently work to restore iOS 5.x, so you must have a Pwned LLB (3G model only, as I recall, though I may be overlooking a solution for 3GS users).

None of this can presently be achieved on an iPhone 4S.

There should be little reason to restore 5.0.0 though, as 5.0.1 has a valid, untethered jailbreak available. Are you having trouble with 5.0.1?
