Can you please post the entire log? None of what you have provided is really of any use. Please read the link in my sig and paste the entire log, we'll review and let you know.
From what I can see immediately, Error 11 is what you expect to get if you use TinyUmbrella (or make a custom ipsw) to block the baseband update. You should be able to kick the device out of recovery mode. Alternately, you can get Error 11 if you are attempting to restore a custom ipsw in DFU or Recovery mode -- custom IPSW can only be restored in Pwned DFU mode.
Also, note that they are not signing 5.0 anymore, so you will need to go to 5.0.1 if you want iOS 5.

Should I be using the custom IPSW that Redsn0w spits out the NO_BB? Or should I use the stock 5.0.1 ipsw from apple? I have tried both and none have works.
Yes, I am using pwned DFU mode AND Tiny Umbrella with the Cydia server on exit unchecked. Is their anything I should be doing to get this to work correctly?

That really should cover it -- give it another go and post the full restore log for us. That should point out what's going on. Since you're not getting the "device not eligible" error, I don't believe it's a problem with your hosts file or with Tiny Umbrella's configuration. You should be able to use the NO_BB ipsw that redsn0w kicks out. You can also use the stock 5.0.1 if you do not rely on a jailbreak AND do not want it unlocked -- though a jailbreak exists for 5.0.1, it's semi-tethered at best and I don't recommend it until a little more time has passed and all of the tools get upgraded. You don't want to accidentally bootloop your phone.

Somehow, I did it. I did not use Tiny Umbrella or anything and just did a normal restore without being in DFU mode and it seems to be updating fine now. (I have the apple logo and status bar) So hopefully this goes smoothly. I will reply back when it is done.
